Saturday Soup. I (like many others from the Caribbean) grew up knowing that come Saturday, we would be having soup for our dinner (& supper & Sunday breakfast). In our family it was 'beef soup' - actually made with mutton! On the occasional Saturday we would have peas soup (red kidney beans or gungo peas).

This was and still is a long all day cooking affair. But when it was finally done, everyone looked forward to their bowl of soup. We really did eat 'til our belly bus.' It was worth waiting for.
