Black Bean And Roasted Corn Soup

Black bean and roasted corn soup is a perfect soup on a cold and windy day.  It is super easy to prepare and your family will love it.

The base of the soup is the Latin Style Black Bean Soup from Trader Joes.  If you don’t have a neighborhood Trader Joes, look for black bean soup at another supermarket (so sorry if you don’t live near a TJ’s) :)

What you will need:

  • Two boxes of Latin Style Black Bean Soup
  • About 1/2 a bag of roasted corn (I get this frozen from Trader Joes and it is already roasted)
  • 1 can of organic black beans
  • Sliced fresh or frozen bell peppers (I usually use frozen mixed bell peppers from Trader Joes)
  • Shredded low-fat cheese

Pour two boxes of Latin Style Black Bean Soup into the crockpot.  Add the roasted corn and black beans to the soup.

Sautee sliced fresh or frozen bell peppers and add to the soup.

Set out some shredded cheese, whole grain crackers or whole grain bread and let your kids pick what they want to eat with their soup.
