So, after seeing Sandra Lee butcher Spanish Rice (a.k.a. Mexican Rice) on her new show, Money Saving Meals, I decided to film a video showing you how to make it the right way.

Spanish Rice

1 C long grain white rice (converted or regular)
2 T canola oil
1 C plain tomato sauce
1 C water
1 t salt
1 t garlic (or 3 to 4 medium fresh cloves)
1 t onion powder (or 1/4 to 1/3 C fresh chopped onion)
1/4 t black pepper
1/4 t chili powder

In a deep skillet or saucepan, heat 2 T canola oil. Add rice and toast for 5 minutes (until the rice turns slightly golden). Add tomato sauce, water, garlic powder, onion powder, salt, pepper and chili powder. Mix until incorporated. Bring the mixture to a rolling boil, then reduce the heat to low, cover, and cook for 20 minutes (or according to package directions). Once cooked, fluff with a fork or mix with a spoon and serve.

Notes: If you're using fresh garlic and onion, saute that in the oil as the rice toasts, and proceed with the recipe as directed.

Recipe can be doubled, tripled or quadrupled. Just adjust the ingredient amounts accordingly.
